PRODUCTION.
Ripasso is an excellent red wine, made from the typical grapes of Valpolicella. At the end of the first fermentation, it is left to rest for some time; it is then fermented again on the marc of the same dried variety to produce Amarone. The Ripasso technique is exclusive for Valpolicella and has been registered as a unique brand by the Veneto region.
ORGANOLEPTIC DESCRIPTION.
Our wine boasts an intense bouquet, and its characteristic taste - full and velvety - lingers long on the palate.
ALCOHOL.
13.5 - 14%.
FOOD PAIRING AND SERVING TEMPERATURE.
This wine is particularly suitable for savoury pasta dishes, red meat, game and aged cheeses such as Parmigiano and Monte Veronese. Serving temperature: 20 °C.
